Here’s a simple recipe for Kashata, a popular East African snack made with coconut and sugar.
Ingredients
- 2 cups grated coconut (fresh or desiccated)
- 1 cup sugar
- 1/2 cup water
- 1/4 teaspoon salt
- 1/2 teaspoon cardamom powder (optional)
- 2 tablespoons butter (or ghee)
Instructions
- Prepare the Pan: Grease a square or rectangular pan with butter or line it with parchment paper.
- Cook Sugar Mixture: In a saucepan, combine sugar, water, and salt. Heat over medium heat, stirring until the sugar dissolves.
- Add Coconut: Once the sugar syrup starts to boil, reduce heat and add the grated coconut and cardamom powder (if using). Stir well to combine.
- Cook Until Thick: Cook the mixture, stirring constantly, until it thickens and starts to pull away from the sides of the pan (about 10-15 minutes).
- Add Butter: Remove from heat and stir in the butter until well combined.
- Set the Mixture: Pour the mixture into the prepared pan, spreading it evenly. Press it down firmly with a spatula or your hands.
- Cool and Cut: Allow it to cool completely at room temperature. Once set, cut into squares or rectangles.
