Here’s a simple recipe for Kaimati, a popular Middle Eastern sweet treat:

INGREDIENTS 

  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon yeast
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup warm water
  • Oil (for deep frying)


FOR THE SYRUP 

  • 1 cup sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon rose water (optional)


INSTRUCTIONS 

  • Prepare the Dough
  • In a bowl, mix the flour, cornstarch, yeast, sugar, and salt.
  • Gradually add warm water, mixing until a smooth batter forms.
  • Cover and let it rest in a warm place for about 1 hour, or until it doubles in size.


MAKE THE SYRUP 

  • In a saucepan, combine sugar and water. Bring to a boil.
  • Add lemon juice and simmer for about 10 minutes until slightly thickened.
  • Remove from heat and stir in rose water, if using. Let it cool.
  • Fry the Kaimati
  • Heat oil in a deep pan over medium heat.
  • Once hot, drop spoonfuls of the batter into the oil. Fry until golden brown, turning occasionally.
  • Remove with a slotted spoon and drain on paper towels.
  • Combine
  • While still warm, dip the fried Kaimati in the syrup, allowing them to soak for a few seconds.
  • Place them on a serving plate.


SERVE 

Enjoy your delicious Kaimati warm or at room temperature! They can be garnished with sesame seeds or shredded coconut if desired.
